As a Northerner, I avoid fish and chips in the South as it rarely meets my exacting Northern standards.

However, V.C. Jones in Whitstable (on the High St, towards the harbour end) are a traditional fish and chip shop and I had the most delicious fish and chips there. The fish was perfect, no bones, no skin, melt in the mouth batter that was somehow crispy yet gooey. Great chips and very reasonably priced - although I admit that living in London means that I find pretty much everywhere outside London to be reasonably priced
