What exactly?

Both Hyatt and M+ are both travel cards. Both AMEX you have are cash back cards as well.

You have to be more specific - like you want cash back on restaurants, or which airlines you want to travel, etc.

Selecting credit cards do not have much difference from selecting a car for you.

It is an extremely bad idea to drop an issuer unless that issuer screws you. Even you may not want to use AMEX, it is still a good idea to keep an account open as well as the credit line.

As Costco drops AMEX, this opens an opportunity for you to switch. You can switch one now as you don't really need 2 cards that have the same purpose. For starter, you can switch to AMEX EveryDay Credit Card.

You only lose points that you are not entitled, such as chargeback, return, etc.

Other than that, any rewards you earn with a co-branded card stays with the co-brand.
