St Pete has a revitalized downtown, some great restaurants and bars. Salvidor Dali Museum is there. Then you could run down to Sarasota and visit the Ringling Museum, if into art.
I see they're razing the St. Pete Pier. I suppose that's no great loss to some but I'll miss it.

Kayaking can be enjoyed across the state but one great place to try it is Crystal River. We went out with these folks to kayak among the manatees.

You haven't mentioned golf. By that, I have assumed you don't play. However you are surrounded by courses. I don't play myself but I'm sure someone could make a recommendation.

If you gamble, there are casinos, jai alai and greyhound racing.
