There must be countless options within 2 hours of London available.

I myself have been to most mentioned so far. None have disappointed although the trouble I found with the better known ones like Oxford, Cambridge,York, Bath, Windsor etc. was I didn't find them very relaxing due to the hordes of tourists.

I would opt for Canterbury plus an hour or two spent in near by Sandwich is worth doing as well.
