Do you happen to know if the new aircraft (which I assume are the ones slated for Hawaii and ETOPS certification) are being flown on flights numbered 16XX? I've never seen VX flights prefixed with 16 before, and they seem to start around the time new planes are coming in.

I personally am a huge fan of these ultra-late LAX/LAS/SFO flights. I despise early morning flights because I have to get up unnaturally early, and the thought of being able to fly up and down after my day (without having the cut short my day) is fantastic. I'm sure I'm in the minority here, though!
Put me in your camp as well! Honestly, I love the idea of being able to use VX to do a round-trip along the coast (Amtrak one way, Virgin the other...I just wish the "owl" flight were southbound so I could comfortably catch Amtrak to San Jose, catch one of the late Caltrain trains and BART to the airport, and catch a late flight back to LAX). The late return to the Bay Area just isn't as ideal given hotel costs at that end of the trip.
