When I try to book I chose flexible dates, and it shows an entire month with different amounts of dates for different days. I chose those that were green, which are supposed to be the lowest amounts of miles, in this case 62500.

Then I press next, choose flight.

Then I choose the specific flight which would builds the itinerary.

Then I press next, trip overview.

Then at the part where it says Payment details it says "number of miles required for all passengers 137 500"

Maybe this is due to what you mention about additional miles due to extra seats. However, I do not understand why they can't only give that number initially, instead of making people think the price is 125 000, when it actually is 137 500 ….
