Technically, "out of status" just means that she used to have a valid status, and now that status has expired. The status could have been a B1, B2, F1/2, J1/2, H1-B, etc.
As for her chances of getting caught, it varies greatly. I'd say most likely she would be ok, but as with any other trips outside of the mainland, there is a slightly elevated chance that CBP could be conducting random immigration checks on a domestic flight.
