M Bar at the top of the Mandarin attracts an expat crowd.

The piano at the FSHK is ok but a bit cliched IMHO.

I'd go for the Landmark as suggested and then plan to head out. There are so many lively places within an easy stroll. Sevva is ok on a fine night (Primces Blg). Or, find a friend to take you to the China Club. It's not the coolest place in town but somehow it always seems as if everyone there is having a terrific evening, which is really half the battle.

Alternatively, from the Conrad it's an easy trip over to Star Street in Wanchai. Or head the other way and explore Sheung Wan and Mid-levels. Lots of little bars and so forth tucked away there!
