I think your plan depends on what time you can get to the parks on your arrival day. If you get to Animal Kingdom after 1, you will be rushing to see things before the 5:00 close. Animal viewing is better in the morning, but if you are doing Park Hoppers, you could do everything at Animal Kindom except the Safari and leave that for another morning. MGM will be tough to cram into a half day also. Since Future World is less crowded in the afternoon, you could knock off that half of EPCOT and leave the World Showcase for a second day.
