I would suggest using your half day to see the Animal Kingdom. We've been to that park on 3 occasions, and never found that we've needed the entire day to experience it. If you can get an early start (opens officially at 9am, but you can usually get in earlier), you can maximize your time there.

The Animal Kingdom closes at 5pm anyway so it isn't the best place to use a full day pass (for those who do NOT have park hopping priviledges). If you do not have park hopping priviledges and are getting to the park after, say, 1:00pm, you might feel like you haven't gotten your money's worth here, however.

I have also heard the suggestions regarding the animals' sleeping habits. Never had a problem spotting animals on the Animal Kingdom tours. I am one of those people, however, who kind of feels like "seen one giraffe, seen 'em all", so the Africa and Asia safari tours were not my primary reason for going to the Animal Kingdom.

If you have small children, the will probably love the Dinoland USA area, a huge play area where they can spend hours exploring.

MGM is a much larger park. Most of the rides and "experiences" take longer and I think you could easily fill an entire day there.

Our personal favorites at MGM are the Voyage of the Little Mermaid and MuppetVision 3D. We've never had the stamina or inclination to wait the 75+ minutes to see the Fantasmic show, but we've heard that it is absolutely amazing.
