It depends on who you get. They'll likely have to run it by the hotel to approve it.

I did the opposite, I changed my two free credit card nights in Hawaii to Points + Cash when there was no availability anymore. (I had 3 P+C plus 2 CC initially, changed to all 5 P+C). So yes, you can do things like that, but it's very YMMV.
