The itinerary I want to book would put me 5 hours over (TWOV ends 00:01 just after Monday midnight, flight is 5:00am Tuesday morning).

One option is to check-in and clear immigration before midnight, but the airline/airport might not allow that.
Let me get this straight -- you're spending miles/money on flying to China and then flying elsewhere in Asia. You're also touring around for at least a few days which will involve further expense. After all of that you'd risk your trip over $140 (less if you're nt a US citizen) in visa fees??!!
