I tried booking myself two nights at this Ryokan for August and only managed to get one night. I can't imagine how booked it would be for Cherry Blossom season.

You might want to try private hostels to save money also. They actually aren't that bad and you can save a lot more money. My friends have been to K's house in Kyoto and that would be my recommendation also.
