Last question, how did you find that availability? I'm obviously a newbie at actually spending the miles I've earned and couldn't find anything on Nexusaward.

Truthfully, I can go anywhere whether it be Argentina, Australia, Cape Town (JNB idea is very helpful!) or Hong Kong. If you think any of these places are less challenging that would be good to know and I will scout out options in that realm.
For AA operated routes, you might find better availability if you're willing to book using more AA miles than sAAver level. Look at EZE throough MIA (or NYC) and the DFW-SYD flight.
