I don't think ice cream ever disappeared. But somewhere along the line after the initial NW/DL harmonization they went to bringing a tall cart down the aisle with the full set of toppings all on display in the traditional style. I think was around when they added those black covers to the beverage carts.

Prior to that I think they were brought from the galley (as was most of the service) - I preferred the prior method with fewer carts in the aisle - it felt more modern. But took forever to accomplish. This is one from that era
