You can order from the menu, they also have daily specials (not in price but in composition) and finally the mixologist will concoct a cocktail just for you based on your description of your taste. Great bar and near the theatres but no view. For view try Madame Brussells (rooftop bar) or Siglo (again rooftop, above the European restaurant across from Parliament house).

I've discovered that rydges is across the road from 1806 and the skybus drops right next door to rydges. As long as sleeping in the city isn't too noisy I think I may have found my sweet spot for stays in melbourne
although I'm a bit of an explorer so will probably try out a couple of other spots too but this looks like a good combo. Thank you!
