Worrying I won't get Food I Can Eat Help and Advice Please

Hello all, I am flying LHR to DFW Club World in a few months time. It is a 10 hour flight I believe. Due to a number of health issues I have had to make a lot of changes to the foods I can eat. I think the best description would be Low Carb but BA doesn't seem to have that as a choice. I do not eat Rice,or anything made from flour so no bread or pasta.I also cannot eat cheese due to migraine nor can I eat nuts due to a dental issue.

A recent flight from Copenhagen saw afternoon tea being served, I had pre-ordered Gluten Free, thinking this was as close to low carb as I would get, but was served a rice dish with a rice flour roll. The very kind purser saw I had a problem with this and tried to help but I ended up with the pilots meal as he didn't want it and this was all that was available. I think he was vegetarian as this was cucumber and radish salad. Loads of cucumber, tiny sliver of radish and I couldn't eat the roll or the sugar laden dessert. I cannot fault the effort that man put in but effectively I got nothing. Not a huge deal except, the Copenhagen lounge was poor so nothing to eat there prior to the flight, the flight was about 30 mins late leaving the gate due to late inbound arrival and then developed a fault while taxiing which led to us being delayed a further hour or so while that was fixed. We arrived about 2 hours late at about 7.30PM and I had not eaten hardly a thing since breakfast about 11 hours earlier. I ended up at McDonalds having 2 quarter pounders and throwing the buns. Not my preferred choice but needs must and that was what was available to me.

Can anyone advise what sort of meals I can expect on this long haul flight? Is there a special diet I could request that will help me to dodge a carb laden offering? Or do I need to bring my own food and snacks to ensure I do eat something and keep my blood sugar levels from rapid rises and falls? My preferences are meat, fish and vegetables no bread, no pasta, no rice and no added sugars.

I know some of you probably think I am being very fussy, I don't intend to come across as such but I have to do this or in the long term the consequences are dire. I would be happy to hear of any thoughts and/or suggestions on what I should expect and plan for.
