I had the exact same problem you have: it was very difficult and cumbersome to keep all the filters up with all the new spam messages, especially those with non discript subjects and other tricks spammers use these days.
I started using
Mailwasher which will scan your incoming mail before you start up Outlook. It has all kind of standard filters to catch spam and uses an online list of known spammers. The program will show you a list of your new emails and marks the spam mails it detected. You then have the choice to add or remove mail from that spam list (either on a individual bases or by adding senders to a "friend" or "spam" list). The program can also send a bounce message to the sender of the spam stating that your email address does not exist.
After that mailwasher will automatically start up outlook where you will only see the non-spam mails.
The program is free and works great for me: easy and simple to use. I don't have a link on hand but if you Google a little (or look on download.com) I'm sure it will be no problem to find a download site.
