The thing with PocketPC's is that they are pretty much all alike... What you need is available in pretty much every pocketpc. I know there is an app to use the PocketPc as a Cisco IP phone (hurrah for you!!) so what you need is pretty much available in any pocketpc that will take PCCards (pretty much iPaq only then...).
What you'll be doing with patient information depends on the apps available, will it need to be a pocketpc native app or can is just suck it off the web? Do you want to connect to a terminal server or citrix server?
MP3 playback with headphone jack is available on probably every single PocketPC there is.
