A landing at Kai Tak! (If it's still on any of the machines.) IME, the instructor has always been happy to be guided by you as to what you want to do.

I don't know how much experience or knowledge you have of flying, but it I were advising a complete beginner I would suggest that spending some time reading about what the various controls do will help to improve the experience, because you'll waste less of your booked time doing basic learning.

Also, being able to read the PFD competently always seemed to me to be a good idea. Except I've never done it - my scan is atrocious!

If you want to see what a 747 is capable of, there are some more technical things to try that I've been impressed by and that you won't likely see in real life. For example, try a high-speed high-gross-weight rejected takeoff; it was amazing how quickly the aircraft would stop when it needed to.
