You can follow the advice above and ask for it to be cooked medium (or less). And see how you go. If it comes out not so good you can change your choice.
The menus are extensive - spanning a couple of full pages (of a big sized menu) and each dish comes with a full description. At some stage either before take-off (or shortly after) a member of crew will come talk to you about what you'd like to eat and you can discuss your preferences and/or ask for their recommendations. You can mix and match anything you want... so for example if there's a Chinese lobster dish you'd like to pair with a western soup (or whatever) then that's what you can have.
The second meal service is sometimes smaller than the first one, so you can even build the meal you want by say choosing a snack menu item to add as a starter. It's all up to you!
