In fact they do ask for:

Industry type: Picklist with 9 choices including "Other"
Company structure: Corporation, Partnership, Sole Proprietorship
Years in Business
Number of Employees
Annual Business Revenue: Picklist with ranges. The lowest is $0-49,999
Federal Tax ID Number: "For Partnerships and Corporations, Federal Tax ID (EIN) is required to activate an American Express OPEN® business account"
Role in Company: Picklist with half dozen titles

But note that they ALSO require the applicant's Social Security number and personal income amount, and it isn't clear that they do anything with the company data collected.
