flight attendants staffing

Dear frequent flyers and airlines professionnals,

Does anyone know how the staff is chosen for a defined flight ?

I'm a French citizen but was born in south korea, and I found quite strange to have a korean flight attendant while upgraded in business for a DOH-HKG, and again on my DOH-CDG flight (upper cabin of the A380).
