In China, other than Hong Kong I would suggest you stick to the bigger cities if it is your first time (namely: Shang Hai and Beijing). You have enough sights to see at these two cities.
Now if you are going gallivanting for 20+ days or so it is another story. if if this is a 2 week trip, I'd imagine you spend about 3 days in each city: HKG, PVG, PEK and take various tours around each. PEK has the most sights to see so maybe a little more time there perhaps?
As for hotel:
HKG the "best" is the GHHK to most, I prefer the HRTST, but the wow factor isn't as great.
PVG has PHS, GHS & HOTB
PEK has PHB and GHB
Since you don't have diamond, I would say stay at the park hyatt for both PVG & PEK

Not sure how long I will be there for yet as it depends on flights but likely 10-11 days min. Flying into and out of HKG so that is a must and I agree PEK seems to have the most to see. I was thinking maybe three days in each of those. I wasn't sure about PVG as I'm already seeing two cities (although I could take the train out to Hangzhou to see a different part of China) and was thinking something like Xian might be a good idea (the terracotta warriors look amazing but it would require either a flight or overnight train ride to get out and back) or maybe Guilian?
