If you are time rich you could get a cheap flight (or train/bus!) to Saigon then bus to Siem Reap through Phnom Penh. Saigon-PP and PP to SR are very easy, well-travelled bus routes and each takes about 6 hours: the bonus could be a couple of days in Phnom Penh

VN's direct service should start at a bit over $100, but access to the lowest fares would depend how far in advance you are booking.
