Back in the 80s and into the 90s when AA launched international flagship service, Y food was excellent -- I believe they actually had an elevated menu for French and Belgian routes.
It's been a couple years since I flew TATL Y on AF, but the food was excellent. I have had good Y meals on EK and LX as well.
AA's poor to mediocre (on a good day) Y meals are purely an AA management decision to spend minimally.
