Considering that you are comparing the identical or same class planes to each other, then the question comes with comfort (seat/configuration/etc) and service.
Well, US based airlines do not have 'service' in their vocabulary. And if you plan to fly on United, I'd suggest to eat your food before and after flight (or take something with you) to avoid some very unpleasant experience.
