Pretty sure the ATM airside in T5 near South security will issue EUR, though don't know if it will allow you to use your own bank's exchange rate to take advantage of the FX benefits of the Clarity card. You'll be pretty unlucky if the banks in Greece collapse while you are in mid-air, I would just wait and use an airport or other local ATM when you land.
