They're used to us silly Americans, so without missing a beat (because it was pretty busy) the guy just handed me the slip of paper and a pen while taking other orders and making other drinks.
At another Pret A Manger I used my iPhone to pay, it worked fine, nothing to sign (I reported that on the contactless thread on this forum).
