I was on AA 2334 ORD-DFW 787 flight which was diverted to TUL for refueling on Saturday. I did not think crews were terrible.
It looked like that there were weather situations up north around Chicago also, not just Oklahoma and Texas area, where the flight did make few turns to fly around the weather. What it looked like was that AA 2334 still did have fuel to make it to DFW. However, the regulation is that the aircraft have to have enough fuel to circle around DFW and fly to alternate airport. I think the aircraft ran out of extra fuel for circle around DFW and to alternate airport. Hence, had to fly into TUL to get more fuel.
It was unfortunate situation, but there were weather everywhere not just Dallas area on Saturday. Sorry that you missed your flight to HNL, likely forced overnight at DFW. It really is not the way anybody wants to start the trip to Hawaii. I will not be in good mood if I were in your situation. But I did not think crew did terrible job, and the impression of passenger around me did not indicate that they felt crew did terrible job.
My take is that at TUL we were parked in the middle of tarmac, not at a gate. It could be that we were in the same situation as being on an active taxiway? If such then there may be a regulations that crews have to have galley all secured, not allowed to open carts.
