Every time they call me I say yes I'll take the card if you can confirm a particular night... they never can.
Doesn't have much to do with seasons. When there is high occupancy you cant redeem. No issues to redeem at many hotels in December, but dont try on 24/25th Dec or NYE for example.
Other hotels just show the hotel as completely unavailable. For that I suggest to contact Accor Plus (or the Marketing person who is your contact) to get a special release - which is what I did for the So Sofitel in Singapore.
