Probably for the same reason lots of people doesn't use the discounted business tickets which are a bargain at $3k + tax to LHR.. Limited availability and no points earn on the cheap fares - and in the case of both two people need to be travelling together.
And if you use other FFPs, you will find it much cheaper to redeem compared to Airpoints and much more availability.
If you look at Airpoints redemption on partner airlines between NZ and Europe, the cost is only 1705 APD but unfortunately no partner airlines fly between NZ and Europe with a single flight number. But it gives you a reference how much it costs in "miles" term. $3k using points is hardly a bargain.
