You will need to pick up your bags at JFK and take them through customs, but there will be a dropoff right after customs for American Airlines. They'll be tagged all the way through to Orlando when you check in at MAN.

I'm not sure there _is_ a later JFK-MCO nonstop on AA after that one (doesn't look like it).

If I were you, I'd stick with these flights, and if something goes wrong, AA will get you to MCO, although you might end up having to route through another location.

I did think about this, but this is a 14-day holiday (should've mentioned that!) and need the extra space of cabin baggage.
