For a leisure stay, going to the Ritz in Herzliya is better than anything along the beach in Tel Aviv proper. The Norman is one to watch.
Avoid Walforf and go with David Cit or Mamilla

Tour guides grow on trees in Israel... countless options, but buyer beware
