Doesn't matter which passport one uses to board a plane / exiting your departing country, you can still use a different passport while going through immigration entering your destination country.
Agreed this is my experience as well with both an EU and North American passport. Why would you ever even think about entering Canada on another passport anyway? You have a right to enter Canada with a Canadian passport, with any other passport you are subject to questions and there is no right to entry, just a privilege.
