I recommend the "safari first" option (the first one you listed above). The logistics are the most effective and you don't have to waste the last morning of a 3 day safari going to the airport (1/6 of the safari missed). Also, for a short trip, it is easier to get over jet lag on safari vs. in Cape Town. You could also do this:
