Vistara is a domestic flight. So in BOM you'll have to cross immigration + customs, then check in the vistara flight. (Immigration can take some time depending on the line, but I think you will have enough time if your incoming SQ is not late.)

In DEL, you'll have to walk over to the international side of the terminal and check in as usual. This should be very smooth and not a big deal at all.

It seems to me that you'll have to clear immigration in BOM regardless of whether you fly AI or Vistara to DEL. This being the common element, I don't see how it affects the comparison between your AI and Vistara plans.

It would be nice to avoid immigration in BOM but I don't see how unless your flight to DME leaves from T2 there. Perhaps someone more experienced can advise.
