Personally, I see nothing wrong with a 2 hour 20 min connection time.
Only you can judge for yourself if you wish to put yourself through worrying about flight delays. Some travellers are just chilled. Others have enough stressing them
All depends on how fit you are and how much you are like to stress yourself out. You are aware of your own success rate which is par for the course at LHR.
