Try expertflyer

That's what a few frequent flyers seem to be using. I think there's a pro version which gets you more details but you can trial that version for free at least.

On air nz I select my flights right up to the point of seat select (which is before paying) to see how full things are but this is not as accurate as expertflyer I think. Alternatively you could call the contact centre for the flight you're considering.
