I doubt that Amex cares as they have to give the points whether it's to one or two HHonors accounts. And I doubt that Hilton cares that much either as I'm not sure that they know whether the cards are separate accounts, one is an AU, or both cards belong to the same person but one is a Surpass and one isn't.
Your post is not clear.
1) Are you saying the Primary Owners of the cards are 2 different persons, but the earning from the 2 cards go to the SAME HHonors account?
The above is the scenario the OP asks - different primary cardholders but all use a single HHonors account to direct the pts to.
Or,
2) your HHonors account is one of those JT accounts that HHonors stopped offering such several years ago? In this scenario, either one of the JT owners of the HHonors can have his/her own credit cards and the points earned all go to the JT account. Quite different from 1).
