Air China requires tablets to be off during take off and landing. But they can be used during cruise.
Air China does not allow iPhones (or any smart phone for that matter) at any point of the flight, even in airplane mode. They are not consistent in enforcing the rule though. I too was told to turn off my iPhone when I was listening to music but the FA said nothing to the passenger next to me who was doing the same.
The gripes I have with Chinese carriers:
1- Is it really necessary to turn off all electronic devices > 30 minutes before landing?
2- The occasional smoking cockpit. The stench migrates back in the cabin pretty fast.
3- Sourly flight attendants, but this improved somewhat over the years.
