Flights PVG-HKG are frequent (almost hourly). When you arrive at the KA/CX check-in counters at PVG there'll be a big board listing all flights, and their status ('full' or 'seats available').

As you arrive at the check-in counter, ask if your flight is on time, and if there are rolling delays, you can ask to be put on one that's leaving sooner. If there's space available (and you're going to miss your connection), you may be in luck.
