If coming out of LAX, why not try LAX-IAH (with two stops, many options to choose from, PHX, DFW, etc) and return the next day via the same method. Just looked for a weekend in September. BTW, flights were found on Kayak and then clicked through to AA.com to get the three leg one-way journeys to show. AA.com just shows direct and 1 stop options when I do standard search on there.
