It's a shame that your Mums flight was spoilt by this gentleman, I am sure that it would also happen on Virgin if the flight were full as they do not allocate to seats to anyone unless they pay for them.
I doubt you will be able to convince your Mum about this as her mind but I would have spoken to the crew, maybe the gentleman's female companion should have sat with the two ladies.
