Since you also mentioned desire to see the mountains of Mendoza, you need to find your way to Potrerillos and the high towns above there. Valle de Sol, Piedras Blancas, Las Vegas. There are many cabaņas (small house rentals), and a campground. Vallecitos would be the most ambitious, but I'll post what I have below. I have also stayed in small town of
Las Carditas which has some nearby walks, and Valle de Sol.

Vallecitos is at the base of many hikes to see the entire Cordon del Plata. This place is only accessible by rental car (suv best) or taxi/van. It's a twisted, rocky road to the ~3000 meter base where there is an old closed ski area. I have not stayed at any of these in a few years. Even on a weekend, each of these places would be less than half full with 4-8 other people, and each can perhaps arrange to have you picked up $ in Potrerillos.
