Aircraft type is never guaranteed, so there is always a risk, as there is with having the curtain moved and the various A320 aircraft configurations.
You can change your seat after checkin if you don't choose to print/download a boarding pass.

Yes you can, but it requires you to be offloaded from the flight so you can restart the check in process - and with no guarantee the seat you would prefer is still available either.
This only applies if you download a boarding pass. You can complete OLCI and still go back to choose a new seat online until you get a boarding pass.
