I grant you that good restaurants in 4.5-5 star hotels tend to be on the higher end. I'll just say that, in HK, there are great dining options to be had inside hotels. It's different than places like Japan and many US cities where you'll find both the best food and the best value outside of hotels. Particularly with regards to dim sum, most of my favorite places are inside hotels. And my impression is that hotel dim sum is not any pricier on the whole than the places outside, when you compare apples with apples. For example, Fook Lam Moon costs about the same as IC's YTH, and costs more than Peninsula's Spring Moon (our favorite).
