Some really lousy advice in this thread.

Whether you can record and what you must do by way of warnings, e.g., post a sign, and whether this is video only without audio will be a matter of local law. In the US, that will be state law. Some places have one-party consent (that's you) and others have two-party. Some require a court order, some don't.

Some would allow the hotel employee to sue you (or your employer if you are on a business trip) and some would not.
