Can 2 flight legs be combined into 1 Avios booking?

For example, let's say I'm interested in flying from SFO to MAD. There are no direct routes via BA routes, so the best I can think of is Aer Lingus from SFO-DUB in J (5091 miles for 50K Avios), then DUB-MAD with Iberia (903 miles, 15K Avios). If I book the 2 legs separately, it would be 65K miles. But If I just add up the 2 flights, it would be Zone 7 for 60K. Since Aer Lingus can't be booked online, am I correct to assume I can call the agent and book it this way? What are BA's rules for stopovers (ex, in Dublin)? Thanks
