I suggest being at the consulate when they open, and being really nice to the staff! Bring copies of your itinerary and all of that, plus your passport and green card. Ask if there's anything they can do. Provided you're not setting off red flags, of course they want you to be able to visit Italy (and spend money) - but you will need some bureaucratic help to get everything processed in time.
